One winter’s day in 2003 we fell in love with this beautiful estate located in the north of the island. Coming from a family with long-standing winemaking traditions, we decided to convert Son SimóVell into the base for our new family project.
The finca immediately lent itself to having new life breathed into it. We chose 1.5 hectares of suitably orientated land, influenced by the soft breezes which daily drift in from the sea.
Native and noble varietals, such as Merlot, Cabernet Sauvignon and Syrah, were selected. Ground surveys have confirmed that we have before us an ideal “terroir” for these varieties to flourish. The vines are carefully tended, avoiding the use of phytosanitary treatment,and only a minimum amount is allowed to ripen in order to concentrate on optimum quality of the crop.
Our winery in Alculdia, possibly one of the smallest on the island, cannot handle more than 10,000kg of grape. It is a charming bodega, and we have everything close at hand, easy to manage, clean, salubrious, at the foot of the vines and with a technology as good as any that can be found.
We employ the best new French oak barrels, fine grained and medium roasted, which are used for a maximum of four years, and a new consignment is brought in annually. The wine is aged in the casks for 18 months without being pressed or filtered, before being bottled and stored in conditioned chambers for more than 3 years. At the end of this process we obtain our cherished wine, PECAT.
